Pork Spareribs
Pumpkin (peeled & cut into large chunks)
Fresh Ginger
Water
Bouillon (to taste)
1-3 Red Dates
Lotus Root (optional)
Carrots (optional)
Corn (optional)
Chopped Green Onions (optional)
Cilantro (optional)
Instructions (Electric pressure cooker)
1. Blanch the pork ribs
Bring the ribs to a boil in a pot of water for 5 minutes. Skim off the foam, drain, and rinse the ribs. This helps make a cleaner-tasting broth.
2. Add ingredients to the pressure cooker
Put the blanched ribs, ginger, bouillon, red dates, optional lotus root, carrots & corn, and water into the pot. Keep below the pressure cooker's maximum fill line.
3. Pressure cook the pork
Cook on High Pressure for 15-20 minutes, then allow a natural pressure release for 10ā15 minutes before carefully releasing any remaining pressure.
4. Add the pumpkin
Open the cooker after pressure has fully released. Add the pumpkin and pressure cook on High for another 2ā3 minutes, followed by a quick release according to your cooker's instructions. For firmer pumpkin, use the sautĆ© function until tender.
5. Season and serve
Garnish with green onions or cilantro if desired. Serve warm with steamed rice for a comforting family meal.
